Barbecue-Braised Thai Chicken Legs with Lemongrass Glaze

Making your own curry paste helps tremendously. We make them ( Thai and
Indian ) and divide them into individual portions to be frozen.

Being unsober, I am unable to recall the recipes for the ones I do not have
in front of me as I do the one for Thai yellow curry. I printed this out in 2010
and use it as a base recipe. To this you can add more or less of what suits
you, as well as other chiles / powders, etc to ramp up the heat.
 
6 large red dried chilies
2 tbsp coriander seeds
1 tsp cumin seeds
3 tbsp chopped lemongrass
2 tbsp curry powder
2 tbsp chopped shallots
2 tbswp chopped garlic
1 tbsp chopped galangal
1 tbsp chopped ginger
2 tbsp chopped kaffir lime leaves
( These are not always easy to locate in my area but luckily the owners of my
local Asian grocery grow their own and usually save some for me. )
 
Soak the chilies. Roast the seeds. I prefer mortar and pestle vs. blender
but that's up to you. I enjoy playing with my food. We save 1.5 tbsp portions
and freeze them. Then all you have to do is thaw, fry and add coconut milk
and veggies, proteins, etc.
 
Dude that is some kickass chicken legs and an awesome mortar and pestle.  Do you remember where you got it?  I want one!  Nice recipe too.  I just plain love homemade curry paste.  That tube or jarred stuff can suck it.
 
I purchased it at my local Asian grocery store. If I have one in upstate South
Carolina, I'm sure you have one close to where you reside in PA. They have
lots of interesting items. An assortment of sriracha sauces from manufacturers
you've never heard of! Shit you cannot pronounce! Frozen fish you are unable
to identify! Noodles that are freakin' clear! Freezer-burned questionable "meats"
with no printed expiration dates! 500 lb. burlap bags of rice! And that crazy ass
woman who operates the cash register who dislikes me for some obscure reason
and does some weird thing with her ear each and every time before she hands
me my change, almost as if she's trying to put a curse on me. Too bad for her
that I don't believe in that shit! My wife thought I was joking until she witnessed
it herself.
