sweet fatalii relish

Made a variation of a recipe from my grandma. Used red, yellow and orange bell peppers instead of red and green. Used fatalii peppers instead of japs. Would use more fatalii next time for a little more heat.
 
 
Ingredients:
 
3 Bell peppers (I used Red, Yellow and Orange)
2-3 Hot peppers (i use fatalii)
1.5 Large onions 
1/4 cup Vinegar
1/4 cup Sugar
1 tsp Salt
 
-Chop or food process peppers and onions into small pieces (careful not to make mushy or liquify)
-Strain out the liquid using a large colander
-Put peppers and onions in large pot
-Pour enough boiling water to cover the mixture
-Let stand 5-10 minutes
-DO NOT DRAIN OFF WATER
-Add Salt, Sugar and Vinegar
-Mix well and boil for 5 minutes
 
Process in hot water bath for 10 minutes

yes this is a small batch recipe. Made about 4 of the little jars. There was a little left over which I ate immediately. Very simple to make and very delicious.

I poured scooped some onto hot dogs last night and it was delicious! I imagine it would be great on burgers and chicken fingers. Use it any way you'd normally use relish. Trying to come up with new ways to eat it.
