my first sauce please help

well what i have is 8 habs and 4 thia chilis

i need a step by step process on how to make a sauce any sauce
i have vinager lime juice garlice powder and steak spice :oops:
sugars (iceing,brown,white) and oil

any help would be much needed

You need more peppers. Peppers are small and hollow. When those cook down it will be enough for one serving.
 
It depends on what you want for a base. From the Test Kitchen forum here, I made a sauce that contained a pint of ketchup, a pint of cider vinegar, a half cup of molasses, a teaspoon of salt, and a bunch of habaneros and datils. You can remove the seeds from your peppers, if desired, and blend them thoroughly with at least half of the vinegar, then mix everything in a pot large enough to boil all of the ingredients. Then just boil it slowly for about 30 minutes. It makes a great sauce if you don't mind the ketchup base, but the pepper flavors come through pretty well.
 
i tend to cook everything except the chillis which i always add at the end when i blend everything together then bottle and leave for a bit so the flavours merge, this way you use less pods because you don't cook out any of the heat.
 
Steve...you made hot sauce with ketchup? Oh Lawd...Jesus..please take me now! Please! Anyone out there love me? Kill me now! Please tell me it was a BBQ sauce and not a table hot sauce!

It is based on some of the Minorcan datil pepper relish and hot sauce recipes that I have seen around. Have a look at this thread:

My particular adaptation of the recipes that I have seen is near the bottom of page two. The results were definitely awesome. You can use it as hot sauce, and you can use it where you might use barbecue sauce, too, if you want. It is pretty versatile and definitely delicious.
