Poblano Casserole

This is about as simple as it gets. Serve it with a can of black beans and you've got a meal.

POBLANO CASSEROLE
 
This uses the same ingredients as a stuffed poblano dish we make, but it is simpler to put together.
 
5 or 6 small poblanos
Cooked rice
Ground beef cooked with taco seasoning
Salsa (I used homemade Annie’s salsa, but any commercial tomato salsa will work)
Monterey Jack, grated
Can of green enchilada sauce
 
Cut the poblanos into quarters and remove seeds.
Put poblanos into boiling water and simmer 8 minutes (this softens them and removes the spicy heat)
Put layer of rice in casserole dish
Put poblanos over rice, then a layer of the ground beef
Put salsa over beef, then the grated cheese
Top with enchilada sauce
Bake in 350°[SIZE=medium]F oven for 30 minutes or until casserole is bubbling[/SIZE]
