food Cake and all thats Floury fluffyness Thread

I frequently make Coffee cake and made some yesterday for a guy for his birthday, he didnt show up so I enjoyed it myself and gave a piece to my neighbor and enjoyed it.
 
Coco Buckwheat Coffee cake with Mango Apple Hab Sauce.
 
 
2 cups Buckwheat
1/2 cup coconut oil
1/2 cup fancy molasses
1/4 cup Honey
2 eggs
1/2 tsp baking powder
1 tbsp rounded coco powder
1 tsp Cinnamon powder
1/4 tsp ground fresh Nutmeg
1 tbsp fresh ground (blitzed) Ginger
salt to taste
Chipotley to taste.
 
Mix all except flour, once well blended then add flour.
Let hydrate for an hour.
Add baking powder, pour into pan, let rise for 30min.
Bake 350f for 45 min (that will depend on were you live).
 
Sauce
Blitz 500ml Mangoes, 300ml Apple, 1/2 stick whole Vanilla bean cut up into small pieces, 1/2 cup honey, 2 Red Habaneros, 1/4 tsp salt.

Almond/Coconut spice Coffee Cake.
Had for brunch, was awesome, light fluffy and nice blend of spices. Because of guest I did not put any hot peppers in their unfortunately.
 
2 cups Fife Flour
2 eggs
1 cup apple juice
1/2 cup crushed almonds (blitzed)
1/2 cup shredded coconut 
1/2 cup fancy molasses
1/2 cup coconut oil
1/4 cup honey
1 heap tbsp powder Ginger
1 tbsp cinnamon
1 tsp fresh ground nutmeg
1 heap tbsp coconibs (blitzed with almonds)
salt
baking powder 1 tsp
 
I soaked it overnight to make sure the almonds had swelled and the rest of the spices melded.
Baked 375 for an hour (will depend on your oven)
Dusted with coco powder and some honey drizzle.

Banana Ginger Bread
 
2 cups fife flour
2 eggs
1 large banana
1/2 cup fresh ginger
1/2 cup fancy molasses
1/2 cup avacado oil
Cinamon
Allspice
Nutmeg
cloves (added all the spices together and crushed in Morter)
salt
baking powder
 
Blitz all ingredients except baking powder, leave for 2 hours to hydrate, mix in baking powder, pour into pan and leave 30 min. to rise and bake at 350f for 55-60 min.
Very fluffy and moist, Half gone :)

I would put it in a bowl and pour milk on it, but everyone says I'm weird for eating cake/banana bread that way lol
 
Lemon drop orange chocolate cake:
 
-200 grams of dark chocolate.
-200 grams of butter.
-3 egg yolk.
-3 egg white.
-2,5 dl of sugar
-4dl of wheat flour.
-1,5 teaspoon of baking powder.
-1 orange surface grated.
-fresh lemon drop chilis to taste.
 
Filling:
 
about 230 grams of orange marmelade.
 
For covering the cake:
 
-200 grams of dark chocolate.
-1 dl of cream.
-100 grams of french cream.
- Naga morich to taste.( finely chopped)
 
 
Dark chocolate+butter will be melted in a hot water bath and then let them cool down. Remove the seeds and the white parts of the lemon drops leaving only the yellow flesh. Chop or crush the lemon drops and mix all dry stuff together.
 
Whip up the egg yolks and sugar together and then whip up the egg whites in a separate container.
 
Mix the chocolate butter mixture+ the egg yolk sugar mixture to the dry stuff and mix it up till it is good. Check the final product if it is hot enough, if not add more lemon drops in there.
 
Then carefully mix the whipped up egg white in there using a spoon and bake it in a round cake container for 40mins in 175c.
 
After baking, let the cake cool a little before cutting it to a two parts and use the orange marmelate between the slices. It would be good to let the bake now stay in a fridge for 24 hours before the chocolate covering.
 
Now the chocolate covering:
 
Melt the chocolate and cream together and add the finely chopped naga morich in there, let the mixture cool a little before adding the french cream in there. Now cover the whole cake and enjoy if you can... :party: :fireball:
