Numex Twilight's another beautiful looking plant that goes through that spectrum, but they start out purple and go to a yellowish green. I've got 3 or 4 growing this year. Pimenta Puma ripens to a bright gold with small amount of purple blush remaining
Pimenta Puma x Reaper (FordsFieryFoods) this one ripens to a deep dark blood red
Bellingrath gardens goes through several neat color phases
Filius Blue has several neat color phases as it ripens as well
