I made the adobo separate based on an online recipe and used dried chipotles. I added onions, and Aleppo flakes in addition to what I put in the adobo which was ancho, garlic, salt, oregano, little cumin and some lime zest.

Oh, and I added a whole carrot to it too cuz it was a little sour so I used the carrot for some sweetness.

Yea, I have a little background in the culinary field and my opinion is that if you wanna add sweetness to a dish, don't just add sugar. Add something with sugar in it. It adds complexity.
