End of summer in France - Piment d'Espelette time!

As sure as the days become shorter and it becomes harvest time (in the northern hemisphere at least), it's also Espelette pepper time here in the south of France.
I picked up a string this morning to harvest for seeds and sauce making...

So I'm now good for 2019 on this front. And there are some spare seeds for trade if anyone's interested.

I dont need seeds but I had a fantastic dish with a piment desplette sauce and the chef was kind enough to share the recipe:

X weight of peppers
1/2X weight of tomato
-roast these together
Add to blender with garlic, salt and pepper, and red wine vinegar (all to taste)
Drizzle in good olive oil until smooth and emulsified.

This sauce was served on top of dates stuffed with blue cheese and marcona almonds. Warmed through in the oven. It was incredible.

Thanks for the recipe austin87! I'm going to take a stab at it - challenge accepted! (And of course will report back.)
 
I grew these peppers this year. Nice strong plant, turned out a good amount of pods. Saved some seeds and will definitely be growing again next year.
