3 Years Waiting, Time For Making!

Started this Habanero / Jalapeño based sauce 3 years ago and forgot about it till we moved. Now its time to make some sauce. The smell when I opened the jar was pure mellow pepper with a touch of sweetness. On the stove now for its first boil.

Maroon color, were they red chiles?  The carrots would bring it back a bit orange color.  I'm intrigued about the dark red color and if it would be from the red chiles aging for 3 years and turning dark.
