I am really glad you are going by weight rather than by volume, B/c nothing is more depressing than seeing just how little powder is produced from a single dried pod. It's heartbreaking.
I grew a handful of Poblano plants last year. The plants grew well but did not produce very many pods as compared to the other annuums I grew. It may just be the specific strain I grew (called "Ancho 101;" got seeds from Semillas. Tasted great but pods were small for poblanos and production was underwhelming). So, I switched to the Ancho Gigantico I got from Juanito's, plus the similar Mulato Isleno from the same vendor. Hopefully, these will yield more pods.
I hear you re: the addictive nature of Ancho powder. That, along with ground Pasilla Negra, is a must for any Mexican or Tejano dish, for sure. (And really, probably Guajillo powder too, but it isn't quite as alluring...) DEFINITELY leave stems out. Seeds aren't too good IMO bc they impart bitter/astringent notes but, in removing seeds, you'll also lose placenta which has a lot of flavor. Still, I think it's a worthy trade to lose some placenta while omitting the seeds. It makes a world of difference, in my opinion.
