Not sure what "that angle" is, but so you know, I pulled that "diffuser" shelf and just let the heat in. I think the smoker box is small enough to not need any help spreading the heat...
 
I have the firebox off the unit and cut lines marked. If I could find my damned safety glasses I'd be done... :mope:

Yes & no, Rob. While the cut is done I seem to have gotten myself a bit of heat prostration and had to shut her down. Wasn't even that hot today, but I obviously overdid summin'....

We will continue with a good burn in the morning....if that's ok with ever'body....?

With the snot running most of the day I decided to wait til I can have the little beast loaded all day and see if the Rajun G is right about burn duration.
 
I know this: It's going to cook, because it already has. I just need it to cook consistently and efficiently, more emphasis on the former.... ;)

Reggie, thanks man! I feel the same about your sauces! We had a real crap year for those cherries this season, but I'm gonna find a way to make more. A local shop actually approached me last week to sell the stuff. Maybe I figure a chokecherry hawtsauce of my own, eh?
 
Of course, I'll never find a replacement for Aggravated Assault, that's the ketchup I never had!!

So once again I did this

After four hours the coal is greatly used up and the temp was back down to 180°. So I loaded another lb of coal, left the door open a crack, and decided to heat up some MN style andouille & rice...

Ok boys, I think it's time to figure out how many half inch holes I need to drill. I'd guess start with two, then do another burn....

I have to pick on something. But those "Natural wood coals" are no longer natural haha!
It's a one time deal, boss. I got special dispensation from Rajun. I will pick up a chimney and natural lighting materials.

Read my previous posts. I bought what the losers had. It would be nice to find local coal that fit the parameters, but it looks like internet purchases are my future...

Or maybe Ashen will visit me a nice barrel to make my own....
 
OK so we know it'll burn with fuel in the firebox and it responds when you add more charcoal, now we need to dial it in.
 
Next time you do a test cook light 3/4 of the charcoal you did this time and let them burn down till they ash over. I say 3/4 because it burned at 300 when you opened up the door so a little less and it should run about 250. Then push them to one side and fill the basket again with unlit charcoal and put it in the firebox. Leave the door cracked like you did last time and see how it burns. This will give you a constant fuel supply as they burn and depending on the amount of charcoal you initially light will determine the starting temperature so you also need to play around with how much lit charcoal to start with. It would be easier with a chimney since you know if you filled it full or 3/4 full.
