Here is the base recipe we modify ours off of, I add lots more pepper types and a few other things

Oh ya looks a bit similar.  That one seems more of like a cream casserole.  This one is less creamy/watery type dish.  Its really good if anyone wants the recipe.

Nah in a bowl with some hotsauce.  

 

This is a surprisingly healthy meal if anyone is wondering (you can make it healthier by skipping the cheese, but whats the fun in that).  Its also gluten free for those "types"

Yeah. That's a really nice and well seasoned pan.

Love me some masa! Yum it's like a Mexican Shepard's pie. Genius!

 

Half my family is Mexican heh.  So this is like a mashup of us pasty white people and my over the border uncles as they call it :P

Then I made a sofrito with celery, HG red onions, HG aji amarillo, and an HG rocoto.

 

Digging the colors on all this.  I love dishes with lots of color.  And anything with Aji Amarillos

Added a bunch of chedder, mixed it in then topped with a masa corn crust .  Now into the oven at 450 for 20 minutes.

Well because we had complaints about lack of peppers...and too much food :P  I decided to rectify that tonight.

I am making a Tamale Skillet Pie ... its kinda like a casserole

 

Chicken

Hominey

Corn

Green Chilies

Pablano Chiles

Serrano Chilies

Jalapenos

Garlic

Broth

Cheese

And a tamale corn topping

Nope, the local stores only had a selection of beat up lookin Jals.  I don't know whats going on around here but I cannot for the life of me find a good selection of peppers.  And I dont have my own due to moving mid season.  Cant wait to get my 20x40 plot up for next season though.

I dont even like fish but that looks pretty tasty!
