Sure does! McCormick has long specialized in flavors. The simple fact that they use it in their products tells me that extracts are useful. On a commercial scale consistency is probably more important than anything else and extracts help achieve a certain Heat/flavor balance that people expect...

I have found interesting varieties at some of those fancy "organic" type grocery stores. Asian markets will have some different stuff too.

These ripened to red. Fairly hot from what I remember. Typically annuum taste like a red jalapeño. I have a some dried pods still. Let me know if you want some more seeds.
