    fermenting weighing down the mash

    I like the pie weight idea.  I'm looking for a large crock for bigger batchs.  I was wondering what to use for a weight.  This seems like it would do the trick for way less money than most want for a fermentation weight.

      How coincidental!  Yesterday, I bought some chayote at the local farmer's market and didn't know anything about it.  The guy said that he just peels it, cuts it into cubes and stir fries it with other veggies and that it cooks up similarly to potato.  Next week, I'm buying more to make a sauce...

    I left the seeds in for the heat.  I ran final ferment through my Vitamix, and there is nothing left of the seeds or skins. If I didn't have a Vitamix, I'd probably use a food mill.
