    I smoke the whole with hickory for about 8 hours (cold smoke), then put them in a dehydrator for about three days, the bag them in zip bags or grind them into powder.

    Working with farmer's markets is often like a crap shoot. Take some of your product to one, rent a booth and sell your goods until they tell you to stop. Often that doesn't ever happen. The market's I've been to don't have any regulatory people, require certification, or any other legal stuff...

    I make and sell smoked chipotle cheese. Smoke a block of sharp cheddar with hickory and coals, stir in chipotle powder from the chili peppers I grow, smoke, dry and grind (leaving seeds and stems out). Form into blocks, cool, cut wrap and sometimes freeze. It is getting famous.

    I grind chipotle powder then run it through a grain mill for super fine powder and store it in Mason jars and some in ziplock bags. So far have two quarts of powder, live in a very humid area, no problems. I'll try the sealer, never thought of that.

    Easily empty and rinse woozy bottles by filling bottle with water, if empty, insert a drinking straw in the bottle and invert. The straw serves as a vent and the water pours out without any shaking.

    I smoke my peppers, dry them, powder them and then add them to various cheeses and smoke the cheese with hickory. Very flavorful, freezes for almost a year.
