My given name is Erin Mason , but don't let the name mix you up.
I'm an older gent , who's been married to the same hottie for over 30 years. I've worn many hats so far in my life. At this time I'm a musician/song writer with a small recording studio. My taste in music is pretty mixed. Reggae is my love , but I also play a mix of country styles because those are my roots. I'm also a silversmith. I do mainly Southwestern style jewelry.
I live in the wind blown flat lands of Texas. Amarillo Texas

Dreadie's Pork Adobado
For Adobado Sauce
6 ancho chiles , stemmed & seeded
1/4 cup white vinegar
1 cup water
2 Tbs. olive oil
1 medium onion , thinly sliced
3 cloves garlic , sliced
1 1/2 tsp. cummin
2 cups chicken stock
1 Tbs. brown sugar
2 Tbs. fresh orange juice
2 Tbs. fresh lemon juice
1 Tbs. tomato paste
1 1/2 tsp. salt
1/4 tsp. black pepper
Toast chiles . Transfer chiles to sauce pan . Add water and vinegar . Bring to a boil then lower heat to a simmer . Simmer for 10 minutes or until chilis are very soft . Put chiles and liquid in blender . Puree to a smooth paste . Add more water if needed . Set aside .
Heat olive oil in large sauce pan . Saute onion until golden brown . Stir in garlic and cook briefly to release it’s aroma . Stir in cummin and cook 1 minute . Add stock and chile paste . Bring to a simmer .
In a small bowl mix the brown sugar , orange and lemon juices , tomato paste , salt and pepper to make a paste . Add this to the simmering stock mixture and cook for another 15 minutes . Stirring occasionally .
For Pork
2 1/2 lbs bonless pork shoulder , trimmed and cut into 2 inch cubes
2 tsp. salt
1/2 tsp. black pepper
Heat oven to 350 . Season pork with salt and pepper . Arrange in single layer in a large roasting pan . Pour Adobado over pork and toss to coat . Bake , uncovered for 45 minutes.
Mix pork again , cover with foil and bake until pork is just tender and falling apart . About
