Yeah pretty much. I cooked the sausage, tomatoes, onion and bell peppers with the rice. Like you would a jambalaya. Then topped like a burrito bowl with sliced sausage instead of ground.
Not sure what to call this. Jambalaya, but Mexican inspired. Spanish style rice with field roast "chipotle" sausage. Topped with fresh tomatoes, cheese, avocado, sour cream and hot sauce. Whatever it is. I'm addicted. Ate three bowls 😂

Well, after a delay on the closing of the house and us requiring power of attorney so our agent could sign. The house did finally close this morning. We left yesterday around lunch time out of Louisiana and arrived in St. Louis around midnight. 12-hour Trek because we can't really go over 65 mph...
