it's safe.  It's a method in the Noma Guide to fermentation book, which i ordered today.  Just made two new ferments today and bumped up the salt to 2.5%.  Have them sitting on a towel on top of one of my grow lights to keep warm.

They work fine for fermenting.  Try the vacuum seal method with 2% salt by pepper weight,  keep in a warm place.  Frozen foods have less natural enzymes but can still ferment in a warm place.  

And yet no package still. Sorry to bitch i just figured everyone would get their packages out in a timely manner like last year.  I did my best to send mine out at a decent time again.

Anyone else missing a package besides me?

I think i'm bringing green chile corn casserole to my wifes families get together.  Imagine we will have turkey which sucks.

Duffy has to beg people for new seed types then sells them without asking the person who's garden it came from to begin with.  Super shady.  Pickles fights with him and makes fake facebook profiles to stalk people he blocks lol.  These two guys need to get a life.  Shady people
