I am no expert by any means. But, I would make my cuts above at least one node on the branches. All future growth will start at a node from the past. Looks like you have marked below the nodes.

50% will be fine. you biggest issue will be keeping the media hydrated in your absence and the seedlings from drying out. If this does occur, just water as usual. Seedlings are amazingly resilient.

I grow some smooth chocolate bhuts that look similar to those. could be a bhut cross with a dominant  lesser hot variety. They do look burgundy like a 7 pot, which is one of maybe only 2-3 red peppers I deliberately grow. Definitely interested in how these progress. Do they produce well?
