    Some expert on here uses 2 percent salt. I wouldn't worry about the details. Use sea or pickling salt. Don't use table salt

    I thought it sounded like too much vinegar as well.  But it was pretty good!   I ran it through the larger pore size food mill for a thicker consistency.

    I've had one other haul about this size.  The ones prior have been pretty small.     I vacuum sealed some peppers and put them in the frig.  They started to get soft so I threw the vacuum bags in the freezer.  From then on I've been freezing in regular zip lock bags
