Reason I asked is I had that type of discoloration on my small seedlings when I switched to T5's. Pretty sure if you search around there are a few threads about it. Then again it might be something different, but I would hate for you to try and become a mad chemist with nutes for a lighting...

Trent is this the first time you are using T5's?

If your sauce is shelf stable. You bottle hot and store at room temp. Check out Hotsauce 101 for methods.
