I think, if my memory serves me correctly, the fermentation of stems will result in a higher concentration of Methanol as compared to Ethanol... Although the concentration may not be high enough to worry about, you may want to research this further... I just seem to remember something about this...

If you don't mind sharing.... What are you fermenting in and what is your recipe for 100% peppers??? What peppers are you using, how many of each variety and other volumes??? I would like to try my hand at fermenting later this summer or fall... Thanks!!! FLB
