    Yeah, for thin sauces, adding thickening ingredients or xanthan gum will help. Add the gum slowly, mixing well each time or mix with water well and then add to sauce. Don't fear! Go buy $5 worth of peppers from the supermarket and experiment! No other way to learn! :)

    Well the color bleeds over time, I used 1, wasn't happy with the color from a 1/4 of one so gradually added more. Yeah I have read how effective can xanthan gum is, my plan is to experiment to learn these things with experience and theory. More fun!

    Seeing as everybody is guessing, I will inform you that my secret ingredient is purple carrot. Born2Burn Show was the closest to the correct answer. I do appreciate all the thoughts about colouring and flavouring agents, gives me ideas :) Might turn this into a game for a give-away next time...

    I no longer get the stomach pain, even on empty stomach with superhots. However a little bread, milk, potato, banana can go a very long way. It is foolish to eat superhot stuff on an empty stomach, despite me always doing it, without fail almost every time....

    jalapeno storage question

    I have found ripe jalapenos are good to dry naturally, have 2 dried ones in front of me actually, completely unintentional that was, but green, does not work at all. Pickles, sauces, powders, salads, loads of uses for them. Make a paste and freeze it? You'll think of something :)
