Great looking sauce if it is in the jar in the first picture. But there is no Red carrots in that jar is there? Does the roasting help the taste or is to just to crisp the skin of the Hananero? Well done

I have never had any problems with fermented pepper except one time I did not watch and the "juice" fell below the pepper level once and when I opened it up 3 months later the top peppers were white looking. They were nasty looking so I just threw them away and the ones below those were fine...

Thanks RedTail I ahve regular reds from Lucky Dog----the ones I am looking for are Mild heat Rocoto and the yellows---the reds I have are wacko hot---like seven pots. And I have orange too but no yellows and none with mild heat. thanks

Let it sit in a dark place for a few months----this is not rocket science. It will clear on its own without adding any contaminating ingredients. Buy more than one carboy so you do not have to rush the wine. It tastes a lot better when it is completed naturally and it comes out a lot clearer...
