Yeah, it shouldn't matter what acid is present. If it's acidic enough to hinder the growth of bacteria, it should be just fine.

Fussily, salted and oiled then sealed in a hot pan and finished in the oven on 180c for about 10 mins or until medium-rare. That, or sous vide. Do you like coriander?
