food There's a goofy face in my pickled eggs!

Tonight I decided to give pickled eggs a try. A small batch to experiment with. I hard boiled 5 eggs and removed the shells. When I put the eggs on I prepared the brine: 1/2 cup white vinegar 1/4 cup water 1 tsp pickling salt 1 tsp sugar Spices: bay leaves, cloves, all spice, peppercorns...

fermenting Jan 3 2010 Jalapeno mash

Hey all, last week I put up a jalapeno mash and thought I'd post about it. I tried a mash in July and it flopped mostly because I didn't use enough brine. I've learned more since then so here's another go at it. Last time I used kefir as a starter which worked OK but this time I had some live...

    No-Salt Mash

Another tip, that I got from reading a thread somewhere on making sour dough starter (which also uses lacto bacteria) was to add pineapple juice to the mash at the beginning. Pineapple juice will lower the pH of the solution and give the lactobacillus an edge over the competition. As stated...

    Choosing between grow shelves

Updated pic, added mylar walls. Emergency blankets covering cardboard attached to the outside. I'll build a drape or something to hang over the front once I figure out air circulation and stuff.

    golden greek pepperoncini

I am planning a trip in June 2010 to Greece, for 4 weeks. My wife's stepfather is from there and we've been thinking about it for a long time. He owns a small piece of farmland / farmhouse in the mountains. Unfortunately that location gets snow in the winter so I don't think anything would...

Made six cases of hot sauce over holidays

I'm guessing his father in law used salt to age the mash but they didn't add salt to any of the sauces afterwards.

bottles-jars Where do you get your 5 Oz woozy bottles from & lowest cost

I get mine from Richards packaging; they have a location here in my city so thankfully there's no shipping involved. The cost for 5 oz woozies is $0.45 CAD and tops are $0.06 so I have it pretty good. :)

OK to leave tray lid on if temperature good?

I am ready to start some seeds... I have one tray with 50 cells. I am starting some chinense first: bhut jolokia, brown habs, and fatalii. The bhuts will probably take longer to germinate so I am wondering if it will be OK for me to leave the dome on the seedling tray once the quicker...

    Choosing between grow shelves

Here's some quick pics of the shelf: I setup a germination tray with heat pad and lights - no seeds yet - just to tune in my temperature. There's a temperature probe buried in the soil, it's about 87 degrees F now so I may raise the lights another bit. TODO: Box it in with white or mylar.

    Choosing between grow shelves

Thanks, will post pics soon. Got the lights up now, seedling heat mat, seedling tray with some moist seed starter mix, and a temperature probe to see if the temps will be adequate in my cold basement. If it's in range I'll start my seeds real soon but I'm still waiting for some Aji Amarillo...

    Choosing between grow shelves

Nice, johnf. I really like the wire shelves. However I went and got shelf #1 last night since it's a tad wider and deeper, I can box it in, and it was a bit cheaper. I am starting with 4 4 tube fixtures that I also picked up yesterday - 2 per shelf for 2 shelves until I need more space. It's...

    Choosing between grow shelves

Jacob, is that 4 2 tube shop lights for a total of 6 lights per shelf? Is your shelf about 18" deep, and if so are your light fixtures tight together? Any chance you have a pic for me to see? I'm wondering if I should go for 2 or 3 fixtures per shelf, or maybe 3 on one, 2 on the others, and...

    Choosing between grow shelves

I've been thinking of that but once you factor in all the costs building one won't be much cheaper unless I make it a piece of crap. :) LOL j/k sorta, but you know what I mean.

    Choosing between grow shelves

I found two shelving units suitable for growing my seedlings this winter and I'd like your input on them. I have scoped out some 4' florescent shop lights to hang on each level (x2) for 4 tubes per level. The light fixtures are about 6" wide. Both shelves are adjustable and I'll only be...
