    Do you plan to try and get peppers throughout the winter from the ones you plan to overwinter? If not, I think a 5 gal bucket might be overkill. Last year I put mine in maybe a ~2 gal pots and had them sit in my window sill. I also had cut them back too and let them grow back over the winter...
