    It may just be me.. I have been pouring Beyond Z's hot sauce on everything lately.. I think my mouth is adjusted towards the hotter end of the spectrum.

       Interesting! So in this case it would be better to not wash the veggies before placing them? Or is too much natural LAB not a good thing?  I washed the peppers very thoroughly as well.. Do they have the natural LAB too?

    awesome! once it starts making noticeable changes, I will be sure to update! I guess all the variables are what makes it so much fun. It will be fun to experiment with more comlex ingredients after I get a good baseline.

    I didn't add any water, and I did not add any type of yeast. After researching other folk's recipes, such as SmokenFire, there is enough water in the peppers and veggies, and the salt helps preserve/ kick off the process i believe?  Other more experienced folks could give you a better answer...

    Haha, I work on ski patrol, and I should have known to have safety precautions like that in place.. Next time I think I might even wear safety-goggles and put up tape in the kitchen to warn everybody! Good point on smacking the jar.. I should have thought of that.. It was still hot from the oven...
