    chinense Habanero sauce!

Habanero  sauce! After all the superhot peppers, I decided to pop open old faithful today after letting it sit for months. Still good of course, but I had forgot how good it was, even though after the super hots, it did not seem that hot. It had great flavor, to the point I thought of using it...

You know you're a Chilli nut when...............

    Strawberry reaper juice!

I like the crock pot method because the long slow heat breaks down more of the pepper in to a liquid form with much smaller solids. Once processed in the new food mill and solids go in to the magic bullet and bet broken down more. Never had solids or seeds block the reducer tops of my woozy...

    Anyone enjoy being a "sleeper"?

Until this year, the hottest sauce I have had was my concentrated habanero sauce, which I carried every where, kind of like I used to carry bottle of tobasco sauce when I was in the Army, I tolerated Tobasco, not because of the heat, but because of the vinegar smell and taste. My parent's took a...

You know you're a Chilli nut when...............

2 batches back to back this weekend. I can leave the windows open no matter what the outside temperature and still be toasty warm while the whole house fan is on.   I knew I was a chili head back in 98, I was sitting down to lunch with a Pilipino friend of mine and he sat two habaneros on the...

misc No Tent, No Banner, What Then?

I have a set of the back drop stands, and they were fairly cheap on Ebay, and easily adjustable to what relative size you may be looking for. PVC is a good idea too but by the time you get to the size you want, your probably ahead going with the prebuilt stand, for packaging and set up.

I met Mike a few days ago, and was able to sample peppers from his garden, as he handed me a box and some Wal-Mart bags and told me to start picking what I wanted. I could not begin to tell you what most of the peppers I ate were, but they were HOT and GOOD! I was finally able to taste a reaper...

Hello from San Diego - Question about building capsaicin tolerance.

Welcome from Central Illinois! I went the sauce route to gain my tolerance. I concentrated over the counter cheap bulk sauces in a crock pot first. Then started making my own sauces. At first I made my habanero sauce, and went through a gallon of sauce in about 6 months. I doubled the habanero's...
