Depends on you taste, But as you said, I would start with a tablespoon( I personally prefer more, but i just love honey), try it out and if it is not good enough, put in some more, and taste again. Repeat until it fits your preferences :D

In my experience it works quite well with different species of pepper(atleast with the domesticated ones, dunno about the wild ones(especially the ones with 2n=26).
