fermenting Anyone using Easy Fermenter Lids

Yeah I just purchased the 4 lids for $8.99, no glass weights.. Just purchased a second set actually as I got a bunch of pepper ferments going on. I've gotten creative with that on my own ;) big win I've found is solo cup lids as a ferment gate and on stubborn ones using stones or paperweights...

fermenting Anyone using Easy Fermenter Lids

I got the same ones and have been satisfied so far, not to mention they're much cheaper than OP's version Sent from my XT1565 using Tapatalk

    First Time Processing Peppers

Man you took the words right outta my mouth.. I am with you 100% on all those points! Not to mention the new trays are shit and not at all like the original ones they came with.. They're "cross-trained" to fit all models so they basically sacrifice and compromise the design for all of them to...

Looking for a majical green color sauce

I got the citric acid from previous canning, will it alter the flavor much or should I sub out any other acidifier since I'd be using C6H8O7? Big changes in color retention? Sent from my XT1565 using Tapatalk

Storing sauces and canned products temperature

Haha I know how that goes.. Nah it's dead flat as I've had the lid off a few times to move it I think the seals just shot out completely, probably from having stuff stacked on it in the past before I got it..its got 4 screws for each hinge that are slotted as well and tried that route too :-/...

    fermenting Yellow ferment

Wow that's a lot of pineapple!! Can you still taste the Chilies properly or is it fruit dominant? I successfully made my first fruit sauce last night, went with a yellow sauce as well. Used 2 mango and 1 large apples. Garlic Smoked onion and half the peppers turned out awesome. Bad brains sugar...

Storing sauces and canned products temperature

It's highly possible (the seals) it's a haier older one I wonder If I can still source those..I wouldn't wanna spend much it's a POS and not worth much, maybe Craigslist or fb deal? Wonder how cheap another one is.. Sucks because I hesitated storing large amounts of peppers because of it (altho...

Storing sauces and canned products temperature

Hmm I have a new fridge to put inside may do the same thing and put fridge/freezer combo in the shed! Only bad thing about the chest freezer is I'm constantly dealing with icing on the edge where it seals and it gets severe-crappy thing is every time I open it is what seems to cause it.. If I...

    food Candied Jalapenos & Habaneros

So both products are equally effective then? Really wanna get into homebrewing now that I've been getting down with all the pepper ferments! I see that the starsan is a much more concentrated product and that is mentions "foaming action" which helps clean cracks and crevices but also requires...

For sure, good tips, and yeah I'm very familiar with BWB and pressure canning, just was wondering what I can and can't get away with in regards to *certain* recipes :) would heating woozies before HFH be advantageous for the same reasons you listed above? Sent from my XT1565 using Tapatalk

    preservation Really hot vinegar

Yeah I love fire and Ice! I'm quite familiar with cucumber vinegar onion mix, pops made it growing up and it was a fridge staple! Ive made a couple pepper vinegars or "peppa sauce" as they say down south with some fun peppers. Had same thing, onion, garlic, and Lil pickling spice but my basil...

Storing sauces and canned products temperature

This was a very thorough and great explanation! Thank you! And salsalady u crack me up! Lol! So aside from the containers cracking and all that permitting I have safe containers-does a repeated freeze thaw cycle degrade the contents? I'm looking at the worst lows of 20s for a few days where the...

Storing sauces and canned products temperature

The things we do! I did the same thing in that shed with all my plants when we had a freeze for a few nights then put them on hydroponic life support afterwards and that's how they now sit! Straight ripped out of the ground and into totes and 5gal buckets.. Gotta ripen them green pods since the...

    food Candied Jalapenos & Habaneros

Ah makes sense with purging the airspace! So even brand new jars have to be washed? I wish I had a dishwasher! Would have made this seasons harvest/preservation and what's to come a lot easier! For every recipe I do it's a struggle to get everything clean again-the kitchen, cookware, tables...

    food Candied Jalapenos & Habaneros

I didn't have them warm first they were the new 12oz crystal ball jam jars. Straight from the package to the counter. The only negative was that the syrup level reduced a bit in the jar as it cooled-probably some absorbing into peppers as well so there is about an inch or more of non-submerged...

    food Candied Jalapenos & Habaneros

Would it be safe to hot pack these straight from boiling once they're finished -> canning jar/new lid->pour syrup on top and call it a day? As far as shelf stable/not fridged? No BWB? I did 3lbs last night and did this with one jar and fridged the other in jar w/o additional syrup added. Sent...
