      I think it is that stressing causes less water in the pepper and slightly smaller size due to the lack of water that causes them to taste hotter rather than more capsaicin in the stressed pepper - which is probably what also causes them to have less taste.

      Actually it makes perfect sense -- What he is saying is that as long as you are adding whole peppers you will not get above the total shu for a single pepper -- ie. say you have 50 grams of pepper at 50,000 SHU if you add another 100 grams you now have 150 grams of pepper at 50,000 SHU not 150...

      If you are wanting to keep it all in the third person (ie. John and Ann) should probably use "they" and "their" instead of  "we" and "our" - as amended above in the () along with the removal of "we" in the blank () before building the commercial kitchen.
