Technically speaking, there would still be the extremely low chance of a crossover directly between the non-overlapping pun1¹ and pun1² mutations that would restore the wildtype gene... :)

That's exactly what I think! The oil almost certainly acts as a fixative (solvent) for the flavors that would otherwise just be degraded. Interestingly, non-heat varieties that carry the pAMT mutation still produce an oil consisting of the non-pungent capsinoids instead of the normal...

Some surprising factoid: If you cross two heatless, completely non-pungent lines that have different mutations, then the offspring will be pungent... :)
