    grilling Grilling- Well sort of.

New toy for the Weber.   Fits perfect on my Genesis and keeps me out of the Blackstone market.  I searched for griddles for a while and none of hte grill top ones were very large but this one is perfect for 4-6 people.       Heavy gage stainless and pretty significant bracing underneath. This...

    food spicy lunch meats anyone?

I wanted to play a little with my new Nesco meat slicer today but first I needed some meat.         I cured a loin and had some corned beef on hand so why not. Defrosted some chicken and tied it up into a loaf shape.   Into the fridge for the night last night so the dry rubs could do their...

food Turkey and bacon club and more.

Roasted a spicy turkey on the WSM tonight. (no smoke, just charcoal), fried up some bacon, fresh gouda and muenster and veggies.       This is the only pic from dinner, but with a bunch of turkey left, there will be some great photos coming up this week to fill out the thread.

    Jeff H's trimmed down glog

I debated whether I was doing a glog this year. I guess I am.       The few pubes and chinense I wanted to grow had germination issues. I ended up with a few orange rocotos and a few MOA plants. That was all. I'll pick up a couple of supers at the nursery this spring. I don't need much, the...

    food Texas hippy taco

Since we haven't seen TB around for a while I was thinking we could entice him back with some shrimp tacos.   Since I suck at Hiku in iambic pentameter, I'll just post photos.

food Red Chile Short rib taco

Straight from Bobby Flay's recipe. The only things I changed were the dried peppers. I had Mirisol, Guajillo, and Ancho available so that is what I used.   http://www.foodnetwork.com/recipes/bobby-flay/red-chile-short-rib-tacos-recipe.html         Turned out great and the dinner guests went...

    smoking Canadian Bacon

I must be living under a rock. I had no idea that Canadian bacon was just made out of a salt cured pork loin. How easy and delicious.   Read about it here. http://www.nwedible.com/how-to-make-canadian-bacon-at-home/     This will be my next project for my WSM. I have a 1/2 loin sitting in the...

    Jeff's Glog- 2015 edition.--In the dirt

Here we go again.             Starting a little later this year. Right now, just some pubes. Supers in a week or two and the rest of the crew in Feb sometime.               Since the glog is pretty boring at this point, we'll get it off to a good start with...

    annuum 100,000 SHU cayenne

If you've ever been in one of those spice shops, you'll notice that they sell cayenne powder in several SHU amounts from 40,000 (normal) to 100,000. My question for the group: Who sells seeds for the 100,000 cayenne and what is the name of the particular variety that is more than twice as hot as...

music Guitar- how many of you can read sheet music

A little history. I'm 40 now and have been playing with my guitar on and off since I was 15 (mostly off through my mid 20s through late 30s, but within the last few years I have picked it up again. In the books I had over the years, it was all tab and chords. No sheet music.   I have a son who...

10 reasons why you should grow more peppers than tomatoes.

    food Jeff's Flog- homemade pastrami

I was going to photo bomb the hippy thread, but since I'm trying to be on my best behavior, I might as well start my own thread.    It all starts with fresh buns right out of the oven.    Add some pickled peppers and a vinegar hot sauce. Also added some picklese (not photoed).    Pulled pork...

Ideas for hot sauce for fish

What flavor profiles do you guys find works well for fish? I'm thinking about a dipping sauce so nothing super hot but hot enough.   I have morugas, yellow brain, red ghost, and yellow not-7 pots (hab heat level) in the freezer.   Currently I am thinking the not 7 pot yellow or the yellow brains...

    photobucket links not showing up

Did something change in the last day or two. I can't see any photobucket links that other members post. All other image hosting sites seem to work fine.   Tried both Firefox and IE today and they both are doing it from my work computer.   I see them fine when viewing them from my android phone.

other-condiments Salsa Lady or whoever else knows: Is there a pH requirement for pressure canning

Like the title says. If I buy a pressure caner, what can I can <-- that just sounds clumsy. Does it vary by pH?   Just looking through the newly posted harissa recipe, I got to thinking that there are tons of ajvar, chutney, harissa, adobo, mole and enchalada sauces that I make but but you can...
