    Street food videos

I've watched a ton of Food Ranger and also Mark Weins(I think they've done a couple vids together) https://www.youtube.com/channel/UCyEd6QBSgat5kkC6svyjudA   Food Ranger does get kind of annoying though with the whole OMG we're so DEEEP in the street food territory right now this is UNSEEN local...

Recovering from the weekend, preparing to start applying for grad school

Definitely not the prettiest picture, but the taste was damn good!   I ground up a channa masala mix from toasted whole spices a couple weeks ago and finally got to give it a shot. All I added was mashed fresh garlic/ginger, the spice mix and the chickpeas, with some dried fenugreek  leaf at the...

The texture and sauce consistency of a good chicken 65 is really similar to a General Tso's. Chicken 65 has such a distinct and pungent cumin, black pepper and curry leaf smell and flavor though, and much less sweet. There's a million different recipes out there though, as with many Indian...

Wow! I'll have to try that out. For some reason I've always just assumed they used the word curd and yogurt interchangeably in the recipes

Nice!   Yea throwing artificial food dye into a dish filled with all fresh garlic, ginger and spices just doesn't sound appealing to me. It does look pretty cool when it's done though. I do add about a tablespoon of ketchup to the gravy... a tip I got from my Indian friend's wife, the tomato...

For some reason it doesn't seem to be that popular outside of India. I've only seen it at a couple restaurants and both times it was a dry/no gravy version... kinda like popcorn chicken with cumin and chili powder. Not bad but my Indian co-worker brought some of the real deal into work one day...

Made some Indian Chicken 65 from scratch in the air fryer today. Marinated it for 6 hours in coconut yogurt, egg, rice flour/corn starch, and plenty of spices and chili powder before air frying, and then stir frying up a light ginger/garlic/tomato and spice gravy with curry leaves.   Super quick...

    hot-sauce Yeo's Garlic Chili Sauce

Hmm just checked out the ingredients... it's one of the only sauces like this I've seen without crazy amounts of sugar/preservatives/fake coloring.   Will definitely give it a shot if I can find it at my local asian market.

Agreed, I love coconut based curries I really like the Mae Ploy brand, for some reason Maesri always tastes a little off to me. The quality of coconut milk also makes a big difference, I switched to the cardboard-packed Arroy-D and it's a much richer flavor then anything I've bought at local...

Slow-cooked some beef in an unsalted beef stock, with some ginger, garlic, garam masala and black pepper.   At 10 hours it was super tender and falling apart, so I through it in with some of my pre-made/frozen curry sauce and chopped onions, and dried methi sprinkled on top.     Ended up being...

    The Ramen Lover's Thread

Some quick and easy Korean Shin Ramen, this brand has the best textured noodles(non-fresh) I've tried, nice and fluffy but not spongy.  Just added some beef, scallions, frozen peas/carrots and a variety of extra spices. My lazy go-to  :surprised:

    Youtube money???

You'd be surprised how much some people make.   It seems like the top earners for some reason are people who stream themselves playing video games... apparently there's a huge market for that. Then there's the prank channels, which require very little effort and make lots of money. Then there's...

    Smoking frozen peppers

I'd advise against smoking them, capsaicin can irritate the lungs. That said, thawed ones would probably be easier both to roll up and to light. But yea I've smoked frozen peppers before to use in both sauce and powder, after impatiently thawing them via microwave. Couldn't really notice a...

Anything above a ghost pepper and I can't tell the heat difference anyway, although a reaper is the only one that's ever put me in the fetal position clutching my stomach.

What was the last spicy meal you cooked?

Wow that looks awesome!   My last few meals:   First pic is an Indian style Chicken 65 with curry leaves and fresh sliced chili's. Made in an air fryer I recently got and am loving.  This was the dry version, I'm still working on getting the gravy down to pan fry with.   Second is a Thai Basil...

Wow my mouth is watering now. I like making my curries from scratch, toasted/ground whole spices, fresh ginger/garlic/veggies, etc but here's a basic recipe for a cheap and simple 10 minute curry sauce Water Any flavorless oil (pure olive, refined peanut/sunflower/canola etc) Butter or Ghee...
