If you are not sure what you want to do, or you don't have something that you want to do right now, then I would suggest maybe making powder or flakes since it will keep for long time. Or you could just freeze a bunch of them for now, and then decide what you want to do with them later. Frozen peppers won't be crunchy anymore, but they will still be fine for cooking, making sauces, or for drying and making powder and flakes.
