2nd Successful Sauce

Decided to expand on my earler Kiwi sauce recipe.

Kept the Kiwi/Lemon/Lime idea but used a red wine vinegar and tossed in a papaya that I needed to use immediately before it went bad.

Tossed 5 or 6 jamaican hot peppers and 2 bhuts. Sauced it up and cooked it for a little while adding a few spices.

Came out looking wonderful.

Made for an excellent wing sauce despite the wings being rather low quality.

You need to crisp your wings before you dunk them in sauce. Those look flaccid and rubbery. Deep frying is preferred, but you can use the oven you just need to raise the temp, or broil after baking.

On a side note kiwi does not retain its flavor when cooked (usually). I bet if you removed the kiwi from that recipe it would taste about the same. It's one of the worst fruits to cook.

I will agree that the wing needed to be crisped a lot more. They didn't work right when softer. Like I said, I'm experimenting. Never been much of a cook but I'm teaching myself through trial and error.

I gotta disagree though on the kiwi. My last sauce and this one both retained a very notable flavor from it. It didn't retain the tang from a kiwi like I had originally hoped but it did reveal the sweetness. So long as I avoid the plain white vinegar.

I have a few other fruits that I'm going to work with. 90% of the sauces I see use the same few fruits but I'm hoping to find that one magical fruit and my grocery store has a boatload variety of different fruits so I have the oppurtunity.

The next might be a starfruit. I've been eyeing it for a for a long time. And I really want to see what I can do with it.
 
Its cool that your into your experiments .....the best bet like you said is trial and error. I use kiwi in one of my sauces "morning glory" and if not over cooked it does retain quite a nice flavor. Enjoy!
 
It is very temperamental but it can be cooked with.

I had to word that better.

I make a Kiwi Mango salsa that is really great on some grilled fish. Never thought about throwing some chilies into the mix before but I would be willing to bet that some Chocolate Habs, grilled maybe, would go great with it and give it a nice bite.
 
Oh there will be pictures, but that will be another thread I don't want to steal napalm's thread.

Need to go get some kiwis. This looks good. Except for the chicken. Fry that stuff.
