7-Jonah sauce

After the success of my 1st attempt(my bro-inlaws loved it) I thought I'd try again

2 7-Jonah with placenta
6Tbs bacon fat
1 onion
3 cloves garlic
8 small carrots
1/2tsp ghost chili powder (was pretty hot with the Jonah but I wanted more heat)
2Tbs salt
3Tbs apple cider vinegar

The smell-sweet chili aroma with a hint of bacon

The taste-Slightly sweet chili flavor with undertones of smoky salty bacon, a great combination!

Breakfast, leftover spanish rice 3 over medium eggs and healthy dollop of the Jonah sauce. Probably a little to thick for narrow bottles but perfect for spooning and holding still for a photo.

Bacon! Good idea- can't speak as to shelf life of bacon grease, possibly you would get similar results using cooked "red" (the meat part of the bacon, broken away from the fat)that was dried and pureed-the nitrates in the bacon itself will keep the "bits" from going rancid as fast as the bacon grease.Short term -refrigerate, and it would probably thin more if you warmed it to serve.No argument for taste combo-great thinkin'!

What color were your Jonahs?

I think as long as you skim the fat and process at the correct pH, this could be stored long-term. Sounds great!
