Took a whole organic, free range chicken (I got it on sale for $10 cad!), cut it in half so I can do one side with the "Gentle Jerk" for my wife and the other side with the "Joltin Jerk" for me. Of course, just joltin isn't good enough for me, so I dumped about 2tbsp's of CAJohns Fatalii puree into the ziploc marinating bag as well. I think the two flavours are complimentary.
They are going to sit for the next 6 hours or so and then on the bbq they go...
Now I have to decide what to eat with it. The wife wants rice, I want to use up my kale from the garden... maybe I should stew up some rice with beans and kale?
