I've got a ferment that has been going for about 5 days now.
It's very active.
I just realized that I didn't put as much mango in it as I wanted to.
Is there any reason I can't add it now?
Seems like it would be okay but wanted to check with the experts.
...and remember, fermented mango doesn't taste like fresh. If you're looking for fresh mango flavor in your end result, consider adding after the ferment is done. Then, process as salsalady suggests above.
