A couple of fresh salsas I make using lemon drops (fresh pods and also can use aji powder).
Grilled Pineapple Salsa
1 ripe pineapple, peeled, cored and cut into ¼-inch slices
¼ cup red bell pepper, seeded and diced
4 minced hot peppers (aji lemon drops), or powder to desired taste.
2 tablespoons fresh orange juice
1 tablespoon fresh lime juice
2 teaspoons light brown sugar (optional)
1 tablespoon minced fresh cilantro
Grill (or sauté pineapple slices until caramelized and golden brown. Dice pineapple. Add remaining ingredients and combine. Taste and add more lime juice or chilies to taste. Makes about 3 cups.
Tropical Mango Salsa
2 mangoes, peeled, pied, and diced
2 teaspoons grated fresh ginger
2 teaspoons fresh lime juice
Diced hot peppers (aji lemon drops) or powder to desired taste.
½ teaspoon allspice
Combine all ingredients in mixing bowl. Makes about 2 ¼ cups.
