Well just pulled the trigger and ordered my own Traeger Texas Elite Smoker today. Cant wait till it gets here. I can already see many happy memories we will create together. Oooh.. Its sleek design an elegance.. Hubba hubba!  I have a feeling the other half may get jealous with me spending more time with my smoker than her. I guess its true, the fastest way to a man heart is through his stomach.

Make sure to follow start up procedure every time and no worries! I'm waiting on my savannah stoker control to replace the factory unit better heat control and works with tablets or phone you can check and adjust temp and pellet feed while on the go !!

Here we go... 7hrs in.. Did not get a chance to get a pic of the final. Got too busy hauling it out, setting it up under the heating lamps and carving it up for the hungry. I'll see if someone else has got a pic and post it later if they do.

While the grill is going  cooking up chunks of beef. I think it was like 20 whole roast chunks total. Kinda lost count.

Lots of volunteers today. Everyone was busy from the kitchen to the outside deep fryers, grills, woks and the whole works. Always nice getting together with family and friends for a feast. 
 

I can not wait to see some more pics. That is a true thing of beauty. I would climb into that grill and have you shut the door.

It got a tad bit cold now and then though out the day. I wanted to climb in the grill myself.

Thanks all! Had 1/2 day to recoup. And back at it today. Worked on some pressure cooking stuff. Trying to dial it in. getting ready for salmon season. Cheer all!

Did up some small stuff recently..
75 lbs of pulled pork on the griil. 1 of 2 trays.

Had a couple of chucks of beef laying around to threw them on the traeger. 1 corned beef and 1 rump roast.

Gotta start to remember to take more photos on the final product.   Get to busy wanting eat it and fighting everyone back that the photo shoot goes out the window. Cheers all

Smoking some Rib Eye Roast today. Some pics from yesterday prepping it. will throw this on in about an hour in the Traeger with Pecan pellets.

Rolled and tied once I put some fresh herbs inside.

Finished off with an olive oil bath and dry rub. Only doing half of it today. Saving the other half for next week. Will post more pics later when done. Cheers all

1 hr in at 450. Coming along nicely. Kicking it down to 250 till finished. Couldn't help myself, Had to throw on some mussels to smoke. Used some left over thyme and rosemary rub with olive oil for the mussels. Cheers

Here's some carrots and onion to finish off in the drippings.

Mussels are done. Spiked it up with Moruga pepper powder and more olive oil.

Rare...And loving it.

All sliced up for mothers day feast.
