food Any know how to make good Queso dip?

Real Mexican joints do have it, the authentic dish is called queso fundido.
 
Tex-Mex version is chile con queso, or queso
 
Both are queso dip for tortillas.
 
Queso fundido is thicker because they use real cheese. Often oaxaca (asodero) or chihuaua.
 
Here: http://www.finecooking.com/recipes/tequila-queso-fundido.aspx They suggest cheddar and jack in that one too, not traditional, but it will add sharpness and be a little like the Tex-Mex, so figured I'd post it. Kind of a hybrid.

Maybe not so authentic, but I have never seen the cheese mentioned above. I gotsta find it!
 
Queso dip:
 
1 lb land o lakes jalapeno cheese, cubed
1 of those medium sized tin foil wrapped blocks of cream cheese
peppers of your choice, diced up
 
Grab a double boiler throw everything in there, melt it all while stirring
 
While that is going, grab some thin corn tortillas, slice em into 6es, then get a shallow pan, coat the bottom with some oil plus some, turn the burner to a bit past half power heat the oil and fry the tortilla chips to taste. Salt, pepper and paprika. Dip away!

of course it is. and you can pour it on your hot dogs.
