Are These "Sauce-able"?

So this year, I got what I wanted in an F2 of a cross that I made: Black Naga x Peri-Peri. I got small Peri-Peri looking pods that turn chocolate/Brown.

The problem is, as soon as they ripen, they're soft. They're fine the whole time while green, but once they start to ripen, it's soft-city. And there are a bunch on this plant.

So I can either pick them green, or ask the experts here if an EASY sauce can be made. I still don't know anything about it, so all help is appreciated.

Thank you!

they are sauce-able, freeze-able and dry-able.

Looks like there will be a lot ripening over time.  Pick them when just almost fully ripe. quick rinse to get the dust off and then throw them in a ziplock freezer bag in the freezer.  When you have enough pods, then decide if you want to make a sauce, make a puree, or dry them for powders.

Good luck and have fun!

Thank you very much! You make things so easy. It's awesome to have a SalsaLady around, Ann. A brown purée...hmmm...Things could get interesting. Thanks again!

How do they bnb taste? Just curious cause chocolates are my thing.
I'll try one right now.

Ok. I had to try it twice because these little pods have regular chinense-sized seeds in them. So I deseeded one (not easy while soft) and tried it. The heat is all mouth burn, mainly tongue and gums. I'd say lower than a Per-Peri, but lasts longer. Not as prickly as I was expecting. A little smoother. Flavor was NOT earthy or rich. There was a slight capsaicin bitterness that quickly turned to grassy-ness...which I like. Not too bad. Not really full flavored. But I like the burn.

Interesting flavor profile for a grassy tasting pod. very interesting. Earthy and rich is a plus but not a game ender if not. I like Serranos and they lack it.
Would you like seeds for this? You might like a new chocolate. Lol. And my palette is different from others'. So you may find it rich and earthy? Totally different than my take on it. Who knows.

the Tab x Bbg i grew out this year went soft before fully ripe too  :mope:
I see no way to ship and share these: Tab x Bbg ripe pods without them arriving as a soggy mushy mess
There is another plant with a more dominant calyx that hasn't ripened yet...
Maybe that phenotype will not go soft so quickly ?
One can hope anyway.

Thank you, GIP! Remembering back, I believe 96strat said the same thing. Bummer. But we can share the seeds, anyway. Lol. I'm going to try something with them because this is what I wanted when I made the cross...well, not the softness. So Chinense x Frutescens may need more stabilization to firm the ripe pods up. I have an isolated pod. So I'll keep going with this one.
