This is a classic Caribbean / Bahamian comfort food dish.
Its usually prepared on weekends to sooth the after effects of a long night of partying
1 Whole Chicken (I add about a lb of extra wings) Cut up into pieces.
1 1/2 cups of bottle or fresh lime juice (can add more or less to taste)
1 Yellow Scotch Bonnet
1 Chocolate Habanero (Can use any variety you like)
2 table spoons of all spice
2 table spoons of salt (Add or subtract to taste or health reasons)
2 table spoons of seasoned salt
1 table spoon black pepper
1 large onion chopped or left in rings
2 - 3 large potatoes chopped into chunks
1 large carrot chopped
2 sticks of celery chopped
4 bay leaves
Season chicken with lime, salts, hot peppers, black pepper, all spice and bay leaves. Let marinate 1+ hours.
Then add all ingredients into a large pot and add enough water to cover everything completely.
Bring to a boil and continue to cook for about 30 minutes untill meat is tender enough to fall of the bone and potatoes are cooked.
When cooking is done, taste test if the dish requires more salt or lime ( All personal preference)
Serve with some nice hot white or yellow grits.
