We use this mix equal portions with prepared refried beans as a base for many different dishes, son likes it cold on chips...
3# bacon diced and cooked crunchy, pour off most of the grease
Saute in same pan with bacon crumbles and remaining grease;
3# mixed peppers (I use jalapenos, serranos and habaneros) 3 large onions diced until very soft
Mix bacon and pepper/onion mix in an 8qt pot
Back to the hot skillet, add some of the bacon grease back and add 3# diced squash, whatever is in season and cook this down until it's soft.. Add to 8qt.
Tomatoes, fresh or canned both work but 3-4# go into the 8qt plus 3/4 to 1 cup of chopped garlic..
Simmer on a low boil stirring often until the whole mess starts to thicken. When no more liquid rises to the top you're done..
It should be quite spicy and flavorful by itself, almost overpowering, mix it 1/2-n-1/2 with canned refrieds....
We freeze the concentrate and mix up a batch as we need it.
