This is the one I usually use :)

We raise rabbits, and are going to be butchering them shortly...

But I didn't feel like butchering just one, late, on fathers day haha.

dude that would have been great im kicking my self i cant believe i didnt think about rabbit.

I love rabbit :) its a little dry, so we mix in some pork... In this case, I was thinking Bacon.
That is one WICKED looking rabbit! LOL

Kinda like the one from Monty Python and the Holy Grail? ;)

Start to assemble with grilled red onion, chopped romaine, and melted Fontina
 
Damn, bringing it down to the wire tonight.

Baked up some rosemary bread. And made some fresh HOT hummus.

While doing that, mixed up some ground lamb with some herbs and spices.

Then chef-lifed it in some olive oil on the CI skillet.

While that was going on, I whipped up some werd-up tzatziki sauce.

Delish.
 
THE PORK-UFFALO BURGER

Ingredients/recipe:

Red wine vinaigrette mayo for the bunz- Red wine Vinegar and Mayo

Burger:

Spicy Italian sausage
Buffalo
Pickled pepperocini
Diced Jalapeno's
Asagio Cheese
Italian Breadcrumbs
Gohst Pepper Salt
Black Pepper
Pancetta on top and bottom of burger

Top with Fontina cheese, grilled onion, drizzle with some more red wine vinagrette mayo and...

Gyro Burger Extravaganza

This thing was f**kin' awesome.

Decided to try using the tastes of a gyro in burger form.

Bun(s):
2 cup bread flour, Tbsp of rosemary, pinch of salt, cup of warm water w/ 1/3 packet of active dry yeast and 1 tsp of sugar.

Knead, let rise for about 1.5 hours, split and roll-pin them into flat bread like shape. Bake @ 450 on pre-heated hot stone for about 15 mins.

Hummus:
1 can chick peas, dash of red pepper, 2 tsp tahini, ~1/8 cup red wine vinegar, ~1/8 cup olive oil, pinch or two of salt

Patty:
ground lamb, onion powder, granulated garlic, oregano, cumin, marjoram, thyme.

Fold this all together and let rest in the fridge for about 2 hours. Then make roughly 1/3# patty and cook on medium heat in olive oil ~7 minutes per side.

Tzatziki sauce:
greek yoghurt, cucumber diced small, granulated garlic, salt, olive oil, dill

The build:
Slather some hummus on the bottom bun. Place the lambburger on. Top with chopped romaine lettuce, pickled greek peppers, tomatoe, some HOT pickled onions (sweet onion in vinegar with congo trinidad and fatalii), and tzatziki.

This one is a contender. Wow - fresh river fish burgers are a recipe for win. The potato chips are a little quirky - I'm sure they're delicious, but it's definitely high risk/reward for the competition.

I would eat this burger many times though. Yum.

Don't have enough time to give a description I Gotta move fast to make the deadline! I'll let the pictures do the talking. It's topped with coconut shrimp with a drisle of sweet poppy seed dressing and a brainstrain if your Man enough.....CHOW DOWN!

Chicken and waffles is a dish many don't understand. It's not breakfast. It's not sweet. It's the balance of sweet and savory, with fried chicken, on top of waffles, with Louisiana style hot sauce and maple syrup dripping down. Sweet, tangy, savory, salty, and delicious.

What I have done here is create a burger with ground chicken, pan fried, on ginger waffles, with compound butter that will drip down with flavors of hot sauce and maple syrup.

Behold...

Maple Chicken:
1 lb. Organic Ground Chicken
Maple syrup mixed in
Formed into 8" patty

Rosemary/Chile de Arbol Breading:
Corn Flakes
Wondra Flour
Fresh Chopped Rosemary
Chile de Arbol
Sea Salt & Pepper
Dredge:
Wondra Flour, Eggs, Breading
Pan fry in corn oil

Gingerbread Waffles:
Bob's Red Mill Organic Whole Grain Pancake & Waffle Mix
Eggs
Oil
Half & Half
Reed's Ginger Beer "Extra" (for fluffiness, and ginger)
Fresh Grated Ginger
In waffle maker, Belgian style.

Compound Chile/Maple Butter
1 bottle Louisiana Style Hot Sauce
Chile de Arbol
Maple Syrup
Cook down, add some butter, simmer. Chill. Mix in 1 1/2 sticks butter. Mix until incorporated. Roll in freezer paper, into log shape. Freeze.

Serve patty on waffle. Add compound butter. Add waffle on top. More compound butter. Serve as one burger or 4 sliders!

The Gyro Burger also a fav - man - I loooooooove all of those flavors. Every single one is a win. I'm a huge Gyro fan.

That said, I'm not sure what the difference is between that & a Gyro other than you used a bottom/top pita instead of serving it in the pita. I've had them almost like the way Sum served it in the Shwarmaria's in Amsterdam many times.

Sorry Sum - not original enough for my vote, but on the bright side you made a great looking Gyro! . Hard to go back-to-back I guess.
