I took that pic as a hint to one of my dishes. Definitely something that always reminds me of Mexican food, and something I always make sure to eat while in Mexico!

I'm on nights starting tomorrow, and I already have dinner for tonight, but I might have to make some fish tacos in the morning.

Maybe some nice scrambled Herring Roe tacos might be better for breakfast? <--- not sure but it seems DEFINITELY Mexican.

I called Jalisco and talked to a guy named Pablo.  I said what do you eat in the morning after you drinkk two bottles of tequila at night.  He said once he wakes up he drinks tomato juice with beer and makes a taco with an egg, some spam, some American cheese and a little hot sauce.  I plan on recreating Pablo's creation minus the unborn chicken fetus..
