1 quart heavy whipping cream
beat on high in kitchenaid for 3-4 minutes, pour off buttermilk, beat on medium for 3-4 minutes, rinse w/ cold drinking water and press, churn on low for 3-4 minutes.

a shipyard pumpkinhead beer
1 tsp pumpkin pie spice
2 egg yolk
1/3 cup brown sugar
2-3 tbsp homemade butter
bring beer and pumpkin spice to boil, whisk in egg yolk and brown sugar previous whisked while beer was boiling. lower heat and simmer 3-5 minutes, then add in butter and remove from heat. whisk and pour.
latkes/kartoffelpuffer
1 lg vidalia
1 egg
6 med potatoes
1/2 tsp salt
1/2 tsp pepper
matzo meal to bind
cube onion and peeled potatoes and process the shit out of them in the cuisinart, then press the water out of them through a strainer and mix in an egg and S&P and enough matzo meal to create a light oatmeal consistency. bring vegetable oil to 6 or 7 on the range, and fry globs of latkes until dark brown. remove to papertowels, and salt immediately.
parsley foam
1.5 cups fresh parsley (chopped)
1 cup purple onion (chopped)
4 tbsp fiji water
2.5 tbsp soy lecithin powder
chop 2 cups of fresh parsley and 1 cup of purple onion in mini-chopper, then add water, soy lecithin powder, and immersion blend for 5+ minutes.
spaetzle
3.5 cup KA flour
1 tsp salt
4 eggs
1/2 cup fiji
homemade butter
1/4 cup seasoned breadcrumbs
make spaetzle dough by mixing top four ingredients in stand mixer. let rise for 10 minutes while bringing salted water to a boil. spatula dough into Kartoffel- und Spatzlepresse and press into water. They float when ready, about ~3 minutes. Drain. Separately brown breadcrumbs in butter in a small pan, then top spaetzle.

gently combine ingredients and ball, then brown in butter and drain on paper towels.

1 jar chili sauce
1 bottle of hefe
1/2 cup grape jelly
worcestershire
stir ingredients over high heat in frikadeller pan, then add back frikadeller and simmer for an hour, reducing sauce.
