KRABBY PATTIES DONE TWO WAYS
 
CRAB CAKES
 
  • 1/4 to 1/3 cup fine, dry breadcrumbs
  • 1 pound fresh jumbo lump crabmeat, drained
  • 1/3 cup mayonnaise
  • 2 tablespoons sour cream
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons Dijon mustard
  • 1 1/2 teaspoons Blackening spice
  • 1/4 teaspoon Worcestershire sauce
 
 
BLACKENING SPICE
 
  • 3 tablespoon paprika
  • 2 tablespoon garlc powder
  • 2 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 2 teaspoon ground pepper
  • 2 teaspoon JHP Thai blend
  • 2 teaspoon dries basil
  • 2 teaspon dried oregano
 
 
Sprinkle breadcrumbs over crabmeat in a medium bowl.
 
Stir together mayonnaise and next 6 ingredients in a small bowl; pour over crabmeat mixture, and toss gently. Shape mixture into 5 (3-inch) patties. (Mixture will be very soft.) Cover and chill at least 1 1/2 hours.
 
Brush crab cakes with 2 tablespoons clarified butter. Sprinkle evenly with Blackening Spice. Cook crab cakes in 1/4 cup clarified butter in a hot cast-iron skillet over medium-high heat 2 to 3 minutes on each side. 
 
 
 
PEACH MANGO SALSA
 
  • 1-1/2 cups chopped fresh tomatoes
  • 3/4 cup chopped peeled fresh peaches
  • 1/2 cup chopped red onion
  • 1/2 cup chopped sweet yellow pepper
  • 1/2 cup chopped peeled mango
  • 2 orange habanero peppers
  • 3 garlic cloves, minced
  • 1-1/2 teaspoons lime juice
  • 1/2 teaspoon minced fresh cilantro
Combine all ingredients and stir well.
 
 
 
Chimichurri
  • 1 cup firmly packed fresh flat leaf parsley
  • 4 garlic gloves
  • 1 Tbsp. fresh oregano leaves
  • 1/2 cup. olive oil
  • 2 Tbsp. red wine vinegar
  • 1 tsp. sea salt
  • 1/4 tsp. black pepper (freshly ground)
  • 1/2 tsp. JHP Pecan smoked 15 pepper blend
 
Finely chop parsely, garlic and oregano.  Combine the rest of the ingredients and stir well.
 
 
I used the same crab cake recipe for both patties, the only differences are what I coated them with before frying and the toppings.  The first one was coated with bread crumbs.  The second was coated with blackening spices.  The build with toppings will be explained with the pictures.

This was a fun one.  We always make crab cakes for Christmas Eve dinner and this was a nice way to enjoy them.  The chimi, guacamole one was to die for.  It really just worked well.  The blackened patty was very good too, just not topped as well as the breaded patty.
 
​PS…The buns are homemade…I just didn't feel like typing up that whole process.  
 
 
 
 
Interesting ... the color washed out with overhead sunshine down here earlier ...
 
I took a photo of a container of salsa on a plate earlier to see how stuff looks right now.
 
I imagine proximity to the equator is a thing, in this case ...
 
Brown ale BBQ sauce
 
All i've made today was some bbq sauce. 
 
1 slice of thick cut boars head bacon
1/2 spanish onion diced
1 clove minced garlic
1tsp butter
1.5 cups puffing billy brown ale with cocoa nibs 
1 cup ketchup
1/4 cup homemade worcestershire sauce (apple cider vinegar, garlic, onion, brown sugar, ginger,ground mustard, black pepper, cinnamon)
1/3 cup brown sugar
2 T bliss blast hot sauce
1 tsp wright mesquite liquid smoke
Pinch of Kosher salt
Pinch of black pepper. 
1/2 cup water
 
Melt butter, add bacon, onion and garlic, cook until golden brown.

Add beer and boil until reduced by half,

add remaining ingredients and let simmer until thickened. 
I hit it with a stick blender for a few seconds just to chop up a few the larger bits.
